Mississippi Mud Cake Recipe

A Delicious Death By Chocolate Experience

Although I haven't made one in years, I came across my hand written recipe for Mississippi Mud Pie Cake and just had to share it with everyone before the writing fades and I can no longer read it.

I remember our Mom making this when we were young and she told us it was called Mississippi Mud Pie. We looked at it and thought 'Huh'?? But it's a cake! She smiled and told us that it was called a Mississippi Mud Pie but it is actually a cake.

Maybe she was pulling our leg or maybe she called it that because of how rich it is or because it looks kind of like something we would whip up when making mud pies in the dirt. Regardless, the name stuck. We didn't care what it was called as long as we got to eat it!

When I was growing up, we made pretty much every dessert from scratch. That's just the way it was done. If you go searching for a recipe these days, more than likely you will use a box of premade ingredients.

This Mississippi Mud Cake recipe is fairly easy and I think in the end you will agree it is definitely one you will be making again and again.

Since I was raised in the NE corner of Mississippi, I suppose I thought it only fitting to carry around with me my tattered copy of Mississippi Mud Cake recipe all these years.

I vaguely remember sitting down and painstakingly writing the recipe down as Mom shared it with me. It is amazing how many recipes she still carries around in her head.

Although this recipe calls for pecans, I think that walnuts would taste just as good as a substitute.

We had a pecan orchard on our property and we spent the days of autumn walking around and gathering up bags of pecans for Dad to sit in the evenings and shell. Mom would then either use them right away or bag them up and put them in the freezer to be used before the winter was over.

How I miss that pecan orchard now when I see the price of pecans per pound!

Cook Time

Prep Time: 15 to 20 minutes

Total Time: About 1 hour

Serves: 12 - 15

Ingredients

  • INGREDIENTS FOR CAKE
  • 1 cup of Butter
  • 1/2 cup of unsweetened Cocoa Powder
  • 2 cups of white Sugar
  • 4 Eggs slightly beaten
  • 1 1/2 cups of self rising Flour
  • A Pinch of Salt (about 1/8 teaspoon)
  • 1 1/2 cups Pecans (or nuts of your choice) chopped
  • 1 teaspoon of Vanilla flavoring
  • 1 10.5 ounce Bag of Miniature Marshmallows
  • INGREDIENTS FOR FROSTING
  • 1 Pound Box of Confectioners Powdered Sugar
  • 1/2 cup of Whole Milk
  • 1/3 cup of Unsweetened Cocoa Powder
  • 1/4 cup Butter softened

Instructions

  1. **Before You Get Started**
  2. -Heat oven to 350 degrees.
  3. -Using shortening, grease and flour a 13 in. x 9 in. x 2 in. pan or casserole dish.
  4. -Measure out your dry ingredients.
  5. -Chop the nuts.
  6. **Making The Cake**
  7. -In a Medium sauce pan melt the butter and cocoa together on low heat.
  8. -When melted, remove from heat and pour/scrape into a large mixing bowl.
  9. -Stir in sugar and beaten eggs.
  10. -Mix well.
  11. -Add flour, salt, nuts and vanilla.
  12. -Mix well.
  13. -Pour into prepared cake pan.
  14. -Bake for 35 - 45 minutes at 350 degrees.
  15. -When cake tests as done in the middle, sprinkle marshmallows on top of the hot cake.
  16. -Cover with Chocolate Frosting.
  17. **Directions for Chocolate Frosting**
  18. -In a mixing bowl, combine sugar, milk, cocoa powder, and softened butter.
  19. -Mix until smooth.
  20. -Spread on hot cake.
  21. -Allow frosting and cake to cool several hours before cutting!
  22. Enjoy!
  23. **Heating times will vary depending on your stove and altitude. I would check at 30 minutes to see if done and then bake longer if needed the first time you make.**
