I received this Chocolate Eclair Dessert Recipe several decades ago when I was still working at Corporate America.

The lady that shared this dessert recipe with me has long since dropped out of my life and probably gone on to make her version of this recipe about a million times.

I still have the copy of the recipe that she typed up and shared and it is quite yellowed with age.

This decadent Chocolate Eclair Dessert Recipe is in my stack of treasured recipes that I want to share with everyone here so that my copy will never be lost and you get to enjoy it too!

Cook Time

Prep Time: 20 minutes

Total Time: 6 to 8 hours

Serves: 12 - 24

Ingredients

  • 2 small Boxes of Instant Vanilla Pudding Mix
  • An 8 oz. Tub of Cool Whip
  • 1 Cup of Powdered Sugar
  • 3 Cups of Milk
  • Graham Crackers - About 24 Long Pieces in all
  • 1 Can of Chocolate Frosting - at room temperature

Instructions

  1. **This Chocolate Eclair Dessert Recipe fits well in a 9 x 13 inch cake pan.
  2. - Put pudding mix, sugar and milk in a Medium Mixing Bowl and mix together.
  3. - Fold Cool Whip into the mixture.
  4. - Make layers as follows:
  5. 1 layer of graham crackers
  6. 1 layer of mixture
  7. 1 layer of graham crackers
  8. 1 layer of mixture
  9. 1 layer of graham crackers
  10. **Add a small amount of water (start with 1 teaspoon and add more if needed) to the chocolate frosting to make spreading easier.
  11. - When chocolate frosting is an easy spreading consistency, place on top of the last layer of graham crackers.
  12. - Refrigerate.
  13. **This recipe is better if made in advance and left in the refrigerator for several hours to allow for the graham crackers to soften. If you want your Chocolate Eclair Dessert to be crunchier, then refrigerate accordingly.
  14. Once set, cut into sections, serve and Enjoy!
